I love to bake with my girls and we love playing with different recipes. We love a good traditional brownie, but when I started playing with the idea of a brownie cookie, I couldn’t turn back. These cookies are thin and chewy on the outside but with soft fudgy centers. The powdered sugar topping adds just enough extra pop that these cookies are sure to be a crowd pleaser! Add a few sprinkles to give them a fun holiday feel!

Supplies Needed
- Mixing bowl
- Small Sauce pan
- Measuring cups and spoons
- Spoon or Spatula
- Cookie Scoop

Ingredients
- 1/2 cup butter (melted)
- 1 cup chocolate chips
- 3/4 cup sugar
- 1/4 cup brown sugar (packed)
- 2 eggs
- 1 tsp vanilla
- 1 cup flour
- 2 Tbsp cocoa powder
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 cup powdered sugar
Step-by-step Directions
First start off by melting your stick of butter and 1 cup of chocolate chips in a small sauce pan. You want the chocolate to be smooth.
While your chocolate and butter are melting, in a separate bowl, combine the sugar, brown sugar, eggs, and vanilla.
Add the melted chocolate mixture to your bowl and stir until well incorporated.
Next, add your flour, cocoa powder, salt, and baking powder to your bowl. Stir until all of the flour is well incorporated. Allow to rest about five minutes. This will allow your dough to thicken a bit.
Use a cookie scoop to drop balls of batter into a small bowl of powdered sugar. Roll them around to coat all sides and place on a greased or lined cookie sheet. Do this until your cookie sheet is full.
Bake in preheated oven at 350 degrees for 10-12 minutes.
Allow cookies to rest 3-5 minutes before transferring to a wire rack.

Easy Brownie Cookies
Ingredients
- 1/2 cup Butter
- 1 cup Chocolate Chips
- 3/4 cup Sugar
- 1/4 cup Packed Brown Sugar
- 2 Eggs
- 1 tsp Vanilla
- 1 cup Flour
- 2 Tbsp Cocoa Powder
- 1/2 tsp Salt
- 1/2 tsp Baking Powder
- 1/2 cup Powdered Sugar
Instructions
- Pre-heat the oven to 350 degrees.
- In a medium saucepan, melt butter & chocolate chips together until smooth.
- In a large bowl, whisk together sugar, eggs, and vanilla. Add in the melted butter/chocolate mixture.
- Add flour, cocoa powder, salt and baking powder. Mix all ingredients together until well incorporated. Allow to rest about 5 minutes for the batter to thicken a little.
- Use a cookie scoop to drop the batter balls into a bowl of powdered sugar. Roll around and gently place onto a greased or lined cookie sheet.
- Bake for 10-12 minutes until cookies are set around the edges but soft centers. Allow cookies to rest on pan 5 minutes before moving to a wire rack.
